This project, co-funded by the University of Firenze (Italy), EUR XL-Chem and the Région Normandie, deals with the development of sustainable packaging with improved functions positively impacting the food product quality. Building on the partners’ skills to develop creative formulations to impart desired properties to new active proteins-based packaging is the basis of the joint project to challenge plastic packaging. The understanding of proteins-formulationstructure-properties relationships is decisive to explore industrial scale potentialities.
